SHRIMP AND BEAN SKILLET

2 teaspoons olive oil
- 1/2 cup diced onion
- 1 cup diced red pepper
- 1/2 cup diced celery
- 1 pound peeled and deveined medium shrimp
- 1 cup canned black-eyed peas or black beans, rinsed & drained
- 2 tablespoons minced parsley
- Salt and pepper, to taste
- Dash crushed red pepper
In a medium skillet over medium-high heat, heat the oil.
Add the onion and saute for 2 minutes. Add the red pepper
and saute for 2 minutes. Add the celery and saute for 2 minutes.
Add the shrimp and saute until the shrimp turn pink about
5-6 minutes. Add the beans and parsley. Season with salt,
pepper, and crushed red pepper. Cook 1 more minute.
