Pancakes Fluffy Chocolate Chip Pancakes

2 cups biscuit baking mix
1 cup club soda
2 eggs
1 teaspoon sugar
1 cup semisweet chocolate chips -- (6 ounces)
2 tablespoons vegetable shortening -- divided
In a large bowl, combine biscuit baking mix, club soda, eggs, and sugar; mix well. Stir in chocolate chips until well combined.
Melt 1 tablespoon vegetable shortening in a nonstick griddle or large skillet over medium heat.
Pour 1/4 cup batter per pancake onto griddle and cook pancakes for about 2 minutes, or until bubbles appear on top. Flip pancakes and cook 1 to 2 more minutes, or until golden on both sides, adding more shortening as needed. Serve immediately, or keep warm in a low oven until all pancakes are cooked.
