Root Beer Pot Roast Serves 8-10. 1 (4-lb.) eye of round or chuck roast 1 1/2 tsps. salt, divided 1 tsp. pepper, divided 1 tbl. vegetable oil 1 large onion, thinly sliced 1 (12-oz.) bottle root beer (not diet) 1 (12-oz.) bottle chili sauce 1 garlic clove, minced Recipe is adapted by Julie Kay from a recipe by Patsy Griffin in Southern Living magazine, October 2004. 1. Sprinkle roast evenly with 1 teaspoon salt and 1/2 teaspoonpepper. Brown roast on all sides in hot oil in large Dutch oven overmedium-high heat. Add onion and cook until golden. 2. Place browned roast and onion in slow cooker.root beer, chili sauce and garlic. Pour mixture over roast in slow cooker. 4. Cook on Low for 6 to 8 hours.
