Ortega Taco Casserole- Gluten Free!

1 lb ground Turkey
Dried minced Onion
Onion Powder
Garlic Powder
Salt
Pepper
Paprika
Chili Powder
Mild Taco Sauce
Cheddar Cheese
Diced Tomatoes
1 Package Ortega Yellow Corn Taco Shells.
Saute the ground turkey and drain. return to pan -- and add Dried
Minced Onions (or I suppose you could use a real onion… I just didn't
have any) I did about 7 – 10 shakes -- then dust of the top of the meat
with the chili powder -- then the onion powder, then the garlic powder and
then the paprika -- add a pinch of salt… Add water, about … 1/4 – 1/2 cup…
then stir it around. Add 1/2 jar of taco sauce -- stir until mixed. Taste.
We are going to put this stuff in the casserole dish like
lasagna… First a layer of taco shells, I broke the first layer up pretty
good. then put a layer of meet, then some chopped up tomatoes then
cheddar cheese. The next layer of taco shells, I only broken in half and
basically tried to keep them sticking up. Then I put meet, tomatoes and
cheese.
Baked 375 degrees for 20 minutes.
(You may have noticed from the list of ingredients, that I
didn't have any gluten free taco seasoning mix… turns out, I didn't need
it… this was sooooo yummy!)
(I used a ceramic casserole dish and nothing stuck… but you
might want to grease your backing dish if it's not non-stick)
Anyway… The taco shells that were under the surface got all
mushy and absorbed all the flavor and the ones closer to the top that
stuck out stayed crunchy, so each scoop was a delicious tasty mix of
flavor and texture.
In case you didn't know, the Ortega Taco Shells are Gluten Free,
they say it right on the front of the package. AND, my box has the
recipe on the back (with slight variations, they had taco seasoning mix
and used ground beef)
