Cowgirl's Lemon Poppy Seed Pound Cake

Amount Measure Ingredient -- Preparation Method -------- ------------ ------------ --------- --------- -- An Emmy winner 3 cups all-purpose flour 2 cups sugar 1/4 cup poppy seeds 2 sticks sweet cream butter -- softened to room temperature 1 cup buttermilk 4 eggs 1/2 teaspoon baking soda 1/2 teaspoon baking powder 1/2 teaspoon salt 4 teaspoons grated fresh lemon rind 1/2 teaspoon vanilla extract **Glaze** 1 cup confecticners' sugar 1 tablespoon lemon juice -- (fresh), (1 to 2)
Preheat the oven to 325F. In a large mixing bowl, combine all cake ingredients. Beat on low speed. scraping bowl often, until all ingredients are moistened. Beat on high speed, scraping bowl often, until smooth, about 1 to 2 minutes. Pour into greased and floured 12-cup bundt pan or 10-inch tube pan. Bake for 55 to 65 minutes or until a toothpick inserted in the center comes out clean. Cool for 10 minutes and remove from pan. Cool completely. In a small bowl, stir sugar and lemon juice until smooth. Drizzle over cake.
Makes 8 to 10 servings.
