POACHED CINNAMON ORANGES

Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- - 3 large oranges, peeled and sliced into 1/2-inch rounds - 2 cups red wine or unsweetened grape juice - 1 tablespoon honey - 2 cinnamon sticks - 2 teaspoons grated orange peel - 2 teaspoons vanilla
Prepare the oranges and set aside.
In a medium saucepan over medium heat, combine the wine or juice, honey, and cinnamon sticks. Bring to a boil. Reduce the heat and cook for 15 minutes.
Remove from the heat and add the vanilla and orange peel. Pour over the oranges in a bowl and refrigerate 1 hour. Serve.
