German Sauerkraut Balls
1 1-lb. can sauerkraut, drained 1 med. onion, chopped fine 4 tbsp. butter 1 1/2 c. ground ham 1 clove of garlic, crushed Flour 1/2 c. chicken broth 1 tbsp. chopped parsley 1/2 c. milk 2 beaten eggs Fine bread crumbs
Grind sauerkraut. Brown onion lightly in butter in skillet. Add ham, garlic and 1/3 cup flour. Mix well. Stir broth, sauerkraut and parsley into onion mixture. Cook, stirring, until thick. Spread in flat pan; chill. Shape sauerkraut mixture into 1-inch balls. Combine milk and eggs. Roll balls in flour; dip into egg mixture. Roll in crumbs. Fry in deep 365 degree fat until lightly browned.
