BRINED IN THE JAR DILLS

Amount Measure Ingredient -- Preparation Method

1 small pickling cukes
4 garlic cloves -- (4 to 6)
1/2 hot pepper(use a hot one if you like really spicy)
1 tsp pickling spice
3 sprigs fresh dill+1/2 tsp dill weed -- (3 to 4)
2 TBSP salt
1 cp vinegar -- hot but not boiling
boiling water to fill the jar
Wash and cut off ends of small pickling cukes. Pack each jar with cukes, garlic, chili pepper, pickling
spice, dill, and salt. Add vinegar and boiling water to fill, leaving no headspace. Immediately seal
with clean rings and seals that have been kept in a simmering bath. Adjust caps and shake each jar.
Invert on a towel until cool. Give the jars of pickles to be a good shakin' every day. Your pickles
will be ready in two weeks.
