Pan Fried Potato
1 potato 1-2 tsp extra virgin olive oil spray butter Optional seasonings and herbs: garlic powder salt and pepper dried oregano dried parsley dried basil --Cut the potato into 1/2 inch chunks (I make mine smaller and thinner because it cuts down on microwave time). Microwave in a microwave-safe bowl for 3-4 minutes. While potato is microwaving, coat a pan with oil and some spray butter for extra flavor and heat over medium heat. Put potato into pan straight from microwave and toss a little bit to coat with oil. Allow to crisp and then toss again. Allow potato to cook in pan for approximately 5 minutes. Season with seasonings of choice right before removing from pan. Serve immediately.
