Mexican-pork & poblano tamales

8 oz. lard or vegetable shortening
2 1/2 cups instant corn masa flour
1 tsp. salt
2 cups hot chicken broth -- (2 to 2 1/2)
24 dried cornhusks -- soaked for 30 minutes in boiling water, drained
for the filling
5 poblano chiles -- roasted, stemmed, seeded, and diced
2 cups cooked -- shredded pork carnitas or pork shoulder
1/2 cup finely chopped fresh cilantro
To make the dough for the tamales, beat the lard in a large bowl with an
electric mixer until light and fluffy, about 3 minutes. Place the instant
corn masa flour and salt in another large bowl, pour the hot broth over, and
stir until you have a soft dough. Beat the masa dough into the lard, a
little at a time, until the dough is light and airy.
For the filling, combine the poblanos, pork, and cilantro in a medium bowl.
Arrange the cornhusks on a flat surface. Spread about 1/4 cup of the dough
onto the bottom half of each tamal. Place about 1 tablespoon of the filling
on the dough. Fold the sides in, then the ends, to enclose the filling.
Place the tamales vertically in a steamer; do not let them touch the water.
Steam for 45-60 minutes or until the husks pull away from the filling.
Serve.
