Fried Tuna Sandwiches

1 can tuna in water -- (6 oz.)
1 hard boiled egg -- chopped
2 large dill pickles -- diced
1/4 c. shredded or diced cheese
1 Tbsp. finely diced onion
1/2 c. mayonnaise
2 eggs -- well beaten
sliced bread
Vegetable oil
Mix tuna, hard boiled egg, pickles, cheese, onion and mayonnaise
together well. Place tuna mixture on bread slices to make sandwiches;
cut sandwiches diagonally.
Put about 2 tablespoons of oil in skillet and heat to medium.
Place beaten eggs into a flat dish (a pie pan works great).
Quickly dip sandwiches into the beaten egg to coat all around. Cook
until slightly brown in the hot oil, turning several times. Serve hot
