Herb-Crusted Tomatoes

Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- Ingredients 4 small tomatoes -- (4 to 6) 1/4 cup seasoned bread crumbs 2 tablespoons grated Parmesan cheese 1 1/2 tablespoons butter -- melted 1 tablespoon chopped fresh basil
Directions a.. 1 Preheat the broiler. b.. 2 Rinse the tomatoes and pat dry. Cut off and discard tops of the tomatoes. Arrange the tomatoes in an 11 × 7-inch baking dish. c.. 3 Combine bread crumbs, Parmesan and butter in a small bowl and mix well. d.. 4 Spoon equal portions of bread crumb mixture evenly on top of each tomato. e.. 5 Broil tomatoes 8 inches from heat until lightly browned, about 7 to 8 minutes. Sprinkle with basil.
