2 tbsp. salt
2 tbsp. pepper
2 tbsp. granulated garlic
2 tbsp. dried oregano
2 racks baby back ribs
1 recipe salsa roja
1/2 cup honey
Prepare a medium-hot fire in your grill. Combine the salt, pepper, garlic,
and oregano. Season the ribs allover with this mixture. Brush the ribs with
half the salsa roja Grill, turning often, until the meat begins to pull back
from the ends of the bone, about 45 minutes. Drizzle the honey over the ribs
and continue to grill, turning often, for 15 more minutes. Serve with the
remaining salsa roja.
Mexican barbecued beef ribs
Prepare the basic recipe, using beef ribs in place of the baby backs and
ground chipotle in place of the oregano. Marinate the ribs in Mexican beer
for up to 12 hours, then pat dry, season, and grill as directed.
