Mexican-oak- grilled tri - tip

1 tri-tip roast (about 3 lbs.)
salt and pepper to taste
1 cup oak chips or chunks -- soaked in water for at least 30 minutes and drained
1 cup Mexican beer
Prepare a medium-hot fire in a charcoal grill. Season the roast allover with
salt and pepper. Pour the beer in a bowl. Place the drained oak chips on the
hot coals. When you see the first wisp of smoke from the wood, place the
beef on the grill. Grill the roast, covered, for about 10 minutes on each
side, basting with the beer every 5 minutes. The roast is done when the
internal temperature reaches 140"F. Let the beef rest for 10 minutes, then
slice and serve.
