Potatoes Romanoff
"Grits 'N' Greens and Mississippi Things", Author: Sylvia Higginbotham
6 large potatoes
1 pint dairy sour cream
1 bunch green onions, chopped
1 1/2 cups shredded Cheddar cheese
1 1/2 tsp. salt
1/4 tsp. pepper
Sprinkle of paprika
Boil potatoes in jackets; cool completely. Peel and shred potatoes; mix with other ingredients except paprika. Put into baking dish. Sprinkle paprika on top.
Bake at 375 degrees for 30 minutes. Serves 12.
Note: May prepare and refrigerate day before; bake before serving.
