russie58 AUTUMN MEATLESS CHILI Makes 4 servings.
Lime wedges 1/2 cup chopped parsley 1 tsp cumin 1/4 cup chili powder 1 green bell pepper, seeded, diced, cored 1 butternut squash, peeled, seeded, cut into half moons 1 onion, chopped 4 green onions, chopped 15 oz can kidney beans, drained, rinsed 1 tsp dried oregano 2 cans 14.5 oz each diced tomatoes 1/2 pound carrots, peeled, cut into half moons 3 cloves garlic, sliced 1 tbs olive or vegetable oil HEAT oil in a saucepan. Add onion and garlic, cook 3 min. Add squash, and carrots. Cook 5 min. Add bell pepper, tomatoes, chili powder, oregano and cumin. Simmer partially covered 25 min. Add beans, heat through. Stir in parsley. Sprinkle each portion with some of the green onions and place lime wedges on the side, then SERVE...
