VEGETABLES WITH PORK CHOPS

Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 2 bone in pork chops 1 onion -- sliced 1/8 cup balsamic vinegar Mashed potatoes 1/4 cup parsley -- chopped 1/4 head cabbage -- cored, thinly sliced Salt and Pepper 1 1/2 tbs olive oil
HEAT oven to 400 degrees. Heat 1/2 tbs oil in a skillet. Season pork with 1/4 tsp each salt and pepper, cook until browned. Transfer to a rimmed baking sheet, roast until cooked through 6 min. Wipe out skillet, heat remaining oil. Add onion, cook covered 5 min. Add cabbage, vinegar, 2 tbs water, and 1/4 tsp each salt and pepper, cook covered until cabbage is tender. Fold in parsley. SERVE with pork chops and potatoes...
