Carolina Catfish Stew

Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 2 lb Catfish fillets 1/2 c Bacon chopped 1 c Onion chopped 2 Cans stewed tomatoes 4 Potatoes whole & diced 1 c Catsup 4 tb Worcestershire sauce 2 ts Dill fresh & chopped 2 tb Lemon juice fresh squeezed
Salt & pepper to taste Cut fillets into 1" pieces. Fry bacon until lightly browned in a large Dutch oven over low-heat. Add onion, dill, lemon juice then cook until tender. Add tomatoes, potatoes, catsup, & seasoning. Bring to a boiling. Reduce heat and cook, covered for 30 mins. more then serve. Yield: 6 Servings
