BAKED SALMON CROQUETTES

Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 can salmon (Red Sock-eye) -- (1 lb.) 1 c. Pet evaporated milk 1/4 c. drained pickle relish 1 1/2 c. Kellogg's corn flake crumbs 1/4 c. celery -- finely cut 2 Tbsp. onion -- finely cut
Drain and flake salmon. Mix salmon, 1/2 cup evaporated milk, 1/2 cup Kellogg's corn flake crumbs, pickle relish, celery and onion. Shape into 12 balls or cones. Dip in 1/2 cup evaporated milk. Roll in a mixture of 1 cup Kellogg's corn flake crumbs. Place in a shallow baking pan lined with foil. Bake at 350 degrees for 35 minutes and serve with tartar sauce.
