Crock Pot Chicken Chili

1 1/2 lb. boneless skinless chicken breasts -- cut into 1/2" cubes
1 cup chopped onion
vegetable oil
1 can cannellini or white kidney beans -- (15 oz.) rinsed and drained
1 can diced tomatoes -- (14-1/2 oz.) undrained
1 can diced tomatoes with mild green chilies -- (14-1/2 oz.) undrained
1 cup frozen corn
salt -- dash
1 tsp. ground cumin
1 tsp. minced garlic -- or more
1/2 tsp. celery salt
1/2 tsp. ground coriander -- opt.
1/4 tsp. ground white pepper
Garnishes:
Sour cream -- opt.
Shredded Cheddar cheese -- opt.
Directions:
In a large skillet, sauté chicken and onion in oil for 5 minutes or
until chicken is browned.
Transfer to a 5 quart crock pot/slow cooker.
Stir in the beans, tomatoes, corn and seasonings.
Cover and cook on LOW heat setting for 5 hours or until chicken is no
longer pink. Garnish with sour cream and cheese if desired.
Yield: 6 servings.
