Heirloom Onion Jam
The fruity sweetness of onions lends themselves perfectly to this condiment, excellent on sandwiches and delicious with sharp cheese and roasted pork. Look for an assortment of heirloom onions in your store.
Makes 1 cup
2 large heirloom or sweet onions (about 1 pound), thinly sliced 1 cup dry red wine 2 tablespoons honey 1 tablespoon red wine vinegar 1/4 teaspoon red pepper flakes 1 tablespoon plum or seedless berry preserves 1/4 teaspoon sea salt 1/4 teaspoon freshly ground pepper
In medium skillet combine onions and red wine and bring to a boil. Reduce to a simmer, cover and simmer for 30 minutes. Uncover skillet and add honey, vinegar and red pepper flakes. Simmer uncovered for 45 minutes or until most of the liquid has been absorbed. Stir in the preserves and cook until the onion mixture is thick and the liquid has become a glaze, 3 to 5 minutes. Taste and adjust seasoning with salt and pepper. Let onion jam cool to room temperature, cover and refrigerate. Bring to room temperature before serving.
