Fresh Apple Muffins Ingredients 2 eggs, well beaten 2 cups sugar 2 teaspoons vanilla 1 1/4 cup Wesson oil 3 cups flour 1 teaspoon baking soda 1/2 teaspoon salt 3 teaspoons cinnamon 1 cup chopped pecans 3 cups peeled and thinly sliced apples Mix together eggs, sugar, vanilla and oil. In a separate bowl sift together flour, baking soda, salt, and cinnamon. Add the dry ingredients to the egg mixture. Add pecans. Fold in apples.
