GERMAN POTATO PANCAKES 3-5 med. potatoes 1 onion, med. or lg. 2 eggs Flour (any kind) Salt
Scrub potatoes well. Leave skin on and cut in cube-sized pieces. Place in cold water as cut (to keep from getting brown) until all are cut. Peel onion and also cut cube-size. Put in blender part of potatoes and onion and 1 raw egg and grate. Continue until all these ingredients have gone through the blender. Put into the mixture some salt and flour. Consistency should be same as for any pancakes. Salt according to taste. Heat in frying pan some oil and spoon in mixture according to size pancakes desired. Brown on both sides and serve with fruit, yogurt, etc. Can be frozen and reheated.
