Savoury Cheese Pancakes

Ingredients:
4 oz Flour -- plain
1 Egg -- whole
1/2 pt Milk (Full Cream)
1/4 tsp Salt
3 oz Cheese (Cheddar) Grated
3 oz Cheese (Red Leicester) Grated
1/4 tsp Celery Salt
1/4 tsp Mustard Powder English
1/4 tsp Ground Black Pepper
1 Tomato (Plum) -- tinned, Finely Chopped
1 Egg -- Beaten
1 tsp Sugar
Instructions:
Mix the flour and salt, make a well in the centre and add the unbeaten egg. Add half the milk and then gradually work in the flour.
Beat until smooth. Add the remaining milk gradually and beat until well mixed and the surface is covered with bubbles.
Heat a little oil in a 7 inch frying pan, coating the whole base and sides. Pour off the surplus.
Pour a little batter into the pan to make a thin to medium pancake. Cook over a moderate heat until pale brown underneath.
Slide each onto greased greaseproof paper.
Mix the cheeses, tomato, celery salt, mustard powder, pepper, and sugar thoroughly. Spoon 2 tbsps of the mixture onto a pancake, off centred, brush beaten egg around one half of the perimeter of the pancake. Fold and place on a greased tray.
When all the mixture has been used, bake at 190 deg C. until golden brown.
NOTE: As an alternative, the mixture can be placed in rolled pancakes (like spring rolls). Lightly fried, finely chopped onions may be included, and/or vegetarian bacon pieces. Also, each pancake may be brushed with egg and coated in breadcrumbs.
